Banana Bread
2 Very Ripe Bananas
1 Stick Butter – Chilled
1-1/2 cups flour
3/4 cup sugar little (less ok – I normally use 2/3 cup)
2 Eggs
1/4 cup Milk
1 level t-spoon Baking Soda
1/8th t-spoon salt
2 t-spoons lemon juice
¼ cup walnuts or Pecans – optional
If you are using medium size loaf pan, spray 1 pan with nonstick cooking spray, if you are using small pans, spray 2 of them. Preheat oven at 350F.
In Food Processor, mix butter (cut it into smaller pieces before putting it in Food Processor jar), and bananas till they are well blended. Add rest of the ingredients and mix it well. Pour it into prepared loaf pan/pans (I prefer 2 small ones).
If using one medium pan, bake for 60-65 minutes. If using two small pans, bake for 50-55 minutes.
